BROWN BAG TURKEY


Spice Rub for Brown Bag Turkey

Rub turkey under the breast skin with ½ stick of butter.

Rub the entire outside and inside of the turkey with the other half stick of butter or oil.

Add the following spices (mixed together first) and rub/pat on the outside and inside of the turkey.

2 Tbs. salt

2 Tbs. pepper

2 Tbs. sage

2 Tbs. garlic powder or fresh garlic

2 tsp. ground parsley or fresh

½ tsp. of mustard powder

2 tsp. curry powder

1 tsp. paprika

¼ tsp. allspice

2 tsp. celery powder or dried celery

2 Tbs. of sugar or Stevia for a “sweet/sour” taste—yum!  Actually, this just brings out the flavors in the rub.

Insert the turkey into an old fashioned brown paper grocery bag.  (Do not oil the bag).

Close the bag with two or three staples or clips.

Put turkey and bag into a pan lined with foil.

Preheat the oven to 350° F and cook ~5 hours for a 20 lb. turkey.

If it is better for your schedule to cook the turkey overnight, use 200° F temperature for 10 hours.  For 45 minutes before removing it from the oven, turn the temperature up to 350° to brown the turkey.
